Apple Cake

Ingredients
 
  • 2 cups spelt or whole wheat flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup vegan maple syrup
  • 1/2 cup unrefined corn oil
  • 1 cup diced apples, unpeeled (if organic)
  • 1/3 cup (approx.) apple juice

Place dry ingredients in a bowl and mix well. Mix wetingredients together and add to dry. Place in an 8"round, slightly greased, spring form pan.Topping:1/2 cup chopped walnuts (or nut of your choice)1/2 tsp cinnamon2 Tbsp rice syrup or maple syrup1 tsp unrefined corn oilMix together and spread evenly over cake. (You may have towet fingers to spread mixture evenly.)Bake at 350F for 40-45 minutes. Cool and serve.(This recipe works equally well with pears. Just add 1 tspginger to cake and 1/2 tsp ginger to topping.)Instead of above topping, spread with favourite jam or apple butter and put nuts in cake.Calories: 236/sliceFat: 13 gramsRather fatty, just eat with a low fat meal.Enjoy!!

Pineapple Cream Pie
