Light and Fluffy Pancakes

4 tb BUTTER

2 c FLOUR

2 tb SUGAR

4 ts BAKING POWDER

1 t SALT

2 ea EGG

2 c MILK

4 tb OIL

MELT BUTTER. COMBINE FLOUR, SUGAR, BAKING POWDER AND SALT. BEAT TOGETHER MELTED BUTTER, MILK AND EGG. STIR WET INGREDIENTS INTO DRY MIX UNTIL JUST COMBINED. IT`S ALL RIGHT IF THE BATTER IS STILL LUMPY. HEAT A LARGE FRY PAN OR GRIDDLE. BRUSH PAN WITH SOME OIL. POUR BATTER BY SCANT 1/4 CUPFULS ONTO HOT PAN. COOK UNTIL BUBBLES BREAK, THEN TURN OVER AND COOK UNTIL UNDERSIDE IS GOLDEN. REPEAT WITH REMAINING BATTER, BRUSHING PAN WITH OIL AS NEEDED.
