Whole Wheat Buttermilk Pancakes

Ingredients
1/2cupwhole wheat flour
1/2cupunbleached white flour
1teaspoonsugar
1teaspoonbaking powder
1/2teaspoonbaking soda
1/4teaspoonsalt
1eachegg
1cupbuttermilk OR sour milk (1 c lowfat milk + 1 tb vinegar)
2tablespoonvegetable oil

Directions:

Stir together the flours, sugar, baking powder, baking soda and salt.

Beat the egg, milk and oil together. Add the liquids to the flour mixture and stir just until blended.

Pour the batter onto a greased hot griddle. Serve with fresh fruit slices, unsweetened applesauce or low-calorie syrup.

Makes 12 4-inch pancakes

Apple-Sausage Coffeecake
Preheat oven to 450 degrees F. In a large skillet, saute sausage until browned. Pour off any fat from skillet, add apple slices, sprinkle with sugar and cinnamon.
