Low Fat Lentil Chili

Ingredients
8ozpork, lean, boneless or ground turkey
1cupwater
2teaspoonchili powder
16oztomatoes, cut up, undrained
1teaspoonsugar
3eachcelery, stalks, sliced
1/4teaspoongarlic powder
1eachonion, chopped
1/4teaspooncumin, ground
1cuplentils
3/4cuptomato juice, spicy

Directions:

Trim any fat from meat. Cut meat in 1/2 inch cubes. Heat a non stick saucepan or pan sprayed with cooking oil over medium heat. Brown meat quickly and stir in remaining ingredients. Bring mixture to a boil. Reduce heat, cover and simmer for about one hour or until lentils are tender.

Makes 4 servings.
