Banana Fritters#1

1 C. all-purpose flour

1/4 C. sugar

2 Tsp. baking powder

1 Tsp. salt

1/4 Tsp. ground nutmeg

1 beaten egg

1/2 C. milk

1 Tbsp. cooking oil

1 Tsp. vanilla

cooking oil for deep-fat frying 3 bananas -- cut into 1-inch

pieces hot fudge sauce -- maple syrup or powdered sugar

In bowl stir together flour, sugar, baking powder, salt and nutmeg. Combine egg, milk, 1 tablespoon oil and vanilla; stir into dry ingredients until smooth. In wok heat 2 inches oil to 375 degrees. Dip banana pieces into batter; fry a few at a time in hot oil for 2 to 3 minutes or until golden. Drain on paper toweling. Serve with hot fudge sauce or maple syrup or sprinkle with powdered sugar. Makes 4 servings. Pineapple Fritters; Substitute 1 (15 1/2 ounce) can pineapple slices, well drained and halved, for the bananas in recipe. Apple Fritters: Peel and core 3 large apples; cut into 1/2-inch slices. Substitute for bananas in recipe. Strawberries Fritters: Hull 18 large strawberries; substitute for bananas in recipe.
