Itch Pilaf

Ingredients
 

  • 1 cup #1 bulgur
  • 1 small can tomato sauce - about 4-6 oz
  • 0.5 of tomato sauce can worth of water
  • salt
  • paprika
  • juice of 1.5 lemons
  • chopped parsley and chives

This is a recipe (minus the oil) that my Armenian grandmother makes
during Lent.


Mix bulgur, tomato sauce and water. Wait until liquid is absorbed. Add
the rest of the ingredients to taste.

Klurs Rice
Use Med-Hi heat. Cover bottom of 3 qt. pot with olive oil. Sautee onions, parsley, and garlic. Add tomato sauce and bay leaf. Stir for 2 minutes. Rinse rice in water to remove starch. Add water and salt. Add rice. Stir. Bring to boil. Then red (Upload by user)

Pilaf
combine cranberries and raisins with the apple juice in a small pan. cover and bring to a boil. reduce heat and simmer gently for about 10 minutes. Saute the onion in a little broth or water. Add the rice, bulgur and quinoa and saute for aobut 4 minut (Upload by user)

Bulgur Pilaf
Dissolve miso in 2 cups warm water. In a skillet, saute onion in olive oil. Then add celery, carrots, mushrooms and green pepper, continue cooking for 1 or 2 minutes. Add bulgur wheat to cooking vegetable mixture in skillet, continue cooking and stirring for 2 minu (Upload by user)

Nopales Salad
If the nopales you buy do not already have the thorns removed, do so carefully. I recommend using gloves and a carrot peeler to do this. Once you have removed all of the thorns, wash and chop the nopales, place them in a pan with the 4 cups of water, halved onion and salt. Bri (Upload by user)

No-Fat Caesar Salad
Wash the head of lettuce and break into bite size pieces. Press the garlic and place in a bowl. Add balsamic and vegan red wine vinegar and mix well. Add three Tbsp of water and the lemon juice. Grate some lemon peel and add to dressing. Mix in with lettuce and serve. (Upload by user)

Broccoli Au Tournesol
Take the dry raisins and put in water to make them juicy, about 3 hours. Mix all of the ingredients together, put in the fridg for 2 hours and serve like a salad. (Upload by user)

Greek-Style Salad

Fresh Fruit Salad
Slice the fruit into bite size pieces, place in a bowl, add desired amount of soya yogurt (half a cup) and mix together. Sprinkle sliced almonds on top and enjoy! *This can be made with any kind of fruit. **Makes a great breakfast!
