Cornish Hens with Oranges and Onions For 100

3 Large Contai thawed

orange juice concentrate diluted with 3 cans water 50 good size Cornish hens

40 oranges

30 onions

Crazy Mixed Up salt (to taste) pepper (to taste) thyme (to taste) garlic salt (to taste) Sauce: water or chicken broth 10 Tbsp. white wine -- (10 to 15)

Worcestershire sauce

Line large baking dishes with slices of oranges and onions. Cut the hens in half and set them over the oranges and onions. Brush the hens with diluted orange juice concentrate, season with Crazy Mixed Up salt, pepper, then sprinkle lightly with dried thyme and garlic powder. Bake for 1 1/2 to 2 hours in a 350 degrees oven, basting occasionally with juice from the bottom of the pan. To make sauce pour off juice from the pan and skim off or separate the fat. Add flour and heat to thicken, adding water or chicken broth with about 10 to 15 tablespoons white wine Worcestershire sauce. Pour over cooked, halved hens.
