One of my favorite "quick" salads (and a great way to eat lots of cabbage)!!
Replace some
of the cabbage with colorful oriental style veggies for added color/flavor.
This salad
tastes best when the sesame seeds and almonds are toasted fresh.
1. Wash/dry and coursly chop cabbage and/or oriental veggies
2. Set seasoning packets aside and crush ramen noodles
3. Mix 1/3 cup oil, seasoning packets and vegan sugar
4. Mix all ingredients and serve immediately
(The noodles start to soak up the dressing pretty quickly and then the
salad can become a
little dry--so only "mix" as much as you plan to consume.)
This salad will feed a lot of people (as a side dish)--you may wish to
"mix" half of the
recipe at a time.

While the other ingredients are cooking, mix sauce ingredients together in a large glass bowl. Add pasta. Top with vegetables. Toss lightly to mix. (Upload by user)
Cook up the barley for about 30 minutes on a med/low heat until it is soft and chewy. Mix together the dressing ingredients (mustard, olive oil and lemon juice)and pour it over all the ingredients. This stuff is joy! (Upload by user)

Pull apart or chop vegan bread into bite size pieces. In a large bowl, combine vegan bread, tomatoes, cucumbers, red onions. garlic and parsley. Add enough olive oil and vinegar to lightly coat, toss and serve If vegan bread is too fresh, toast it unt (Upload by user)

Peel the eggplant. Put the sundried tomatoes to soak in hot water. Slice the eggplant, peppers, and onion into small chunky pieces. Slice the tomatoes and garlic cloves finely. Coat a baking tray with cooking spray or olive oil. Put all the vegetable pieces (Upload by user)

Boil the pasta until tender. Cut up the shallots, green peppers, and garlic. Add to a big bowl, along with the drained pasta. Drizzle on the Italian dressing, salt and pepper to taste. Chill and serve Preparation time: 10 min < (Upload by user)

In a small saucepan on low heat, simmer marsala and ginger about 5-7 mins. Add the vegan sour cream and cream cheese, mix well into the vegan wine mixture. Press tofu well. I like to use firm, unfrozen tofu because the consistency reminds me of mayonnaise with out the calories. If you would like to use soy mayonnaise, then defrosted extra firm tofu works best. Mash the tofu in a bowl and add remaining ingredients and mix well. This can be eat (Upload by user)
