Plum Tomato Salsa With Sherry Vinegar

Ingredients
 

6 plum tomatoes, peeled,
1 seeded, and cut into 1/2
1 dice
1 medium shallot, sliced thin
1 serrano chile, seeded and
1 sliced thin
2 tbsp sherry vinegar
1/2 cup olive oil
1/2 tsp chopped fresh thyme, or
1 1/4 ts dried
1 tbsp chopped fresh cilantro
1 tbsp chopped fresh parsley
1 salt and ground black
1 pepper to taste.

Mix all ingredients together in medium bowl. Serve within 2 hours.
