Ingredients
 

  • 1 cup dried lentils
  • 1 cup dried black eyed peas
  • 2 cups cooked rice (brown)
  • 4-5 tablespoon fresh minced chives
  • 1 tablespoon vegan Worcestershire sauce
  • 3 tablespoon olive oil
  • 2 tablespoon white vinegar
  • 6 cloves garlic minced

Preparation
 



Fill a large pot about half way with water and black eyed peas. Bring to a
boil. Once the water starts to boil, time for 5 minutes. After the five
minutes add the lentils and boil covered for 20 minutes. Drain beans and
pour into a colander. Rinse with cool water until the beans are room
temperature. Mix in remaining ingredients. Refrigerate in an airtight
container for several hours or overnight.


To serve:

1. As is

2. As a side dish to veggie burgers, or other sandwich

3. As an entree over a bed of lettuce with slices of tomato and cucumber
(great for lunch)

Easy Greens
Wash greens and break up into small pieces. Put in large sauce pan, add water (not quite enough to cover greens) and boil until they are tender; then drain. Meanwhile, crush and mince garlic. Fry in pan with the oil, add fresh-ground pepper to taste and (Upload by user)

Potato Salad with Shiitake Vinaigrette

Moms Cucumber Salad
Slice cukes very thinly. Place in glass bowl and mix with 1/2 tsp. salt. Let sit 10 minutes. Drain excess liquid from bowl. Mix vegan sugar and vinegar together, pour over cukes and mix, and chill.

Endive Salad with Kumquats
In a large bowl combine dressing and kumquats. Trim ends off cucumber, cut in half lengthwise and thinly slice crosswise. Mix with lumquats. On each place, place 2 radicchio leaves or 4 or 5 endive spears. Mound portions of salad onto leaves. Garnish with mint sprigs, if you l (Upload by user)
