Quinoa Salad

Ingredients
 

  • 1/2 to 1 cup warm cooked quinoa
  • 2 toasted torn up corn tortillas
  • 1/2 cup cooked black beans
  • 1 chopped tomato
  • 2 handfuls salad mix (baby greens mix with nutty tasting greens works best)
  • Italian salad dressing

Preparation
 


Put all but dressing on a plate. Pour enough
dressing to flavor, but not coat ingredients, over
all. Toss with hands and eat. This really does
taste good. It has a subtle mix of flavors and is
between a hearty and light meal. Enjoy.

Preheat the oven at 350(F).Bring water to a vigorous boil and drizzlepolenta into swirling water. Mix in the pepper. Easy Veggie Sandwich

Quick and Easy Beans and Rice
