Fruit Sweetened Oatmeal

Fruit Sweetened Oatmeal

Ingredients
 
  • 2 cups vanilla flavored almond, soy or rice milk
  • 1 cup whole oats
  • 1 apple, not peeled, diced
  • 1 tablespoon (or more) chopped walnuts
  • 1 large fresh date, pitted, chopped
  • cinnamon to taste

Preparation
 

Put all ingredients into a mediumsaucepan. Bring to a boil, stirringoccasionally. Turn down to simmer for approximately 10 to 15 minutes, stirring to prevent sticking.Add a bit more liquid if the oats aredrying up before they are reallycreamy.

The longer you can get the oats tosimmer in the liquid the softer andcreamier they will be. The appleshould be very soft when done. My twoyear old son loves this oatmeal, andwhen have a large bowl in the morning, I find it really curbs my appetite forsometime. I never was a fan of oatmealunless it was doused in butter andvegan sugar, so I was pretty pleased withmyself when I discovered it couldreally be good without all that crapit in. Awesome Breakfast Burritos
Heat ~1 tablespoon olive oil in a largeskillet. Throw in potatoes when skilletis very hot, saute on med-high, stirringfrequently, until translucent (about 5minutes).
