Peanut Butter Oatmeal Muffins

Ingredients
 

  • 1 cup whole wheat flour
  • 1 1/2 teaspoon baking powder
  • 1 cup rolled oats
  • 3/4 cup vegan soymilk
  • Ener-G Egg Replacer for 1 egg(I use 1 tablespoon ground flax seed and 3 tablespoon water)
  • 1/3 cup peanut non-hydrogenated vegan margarine
  • 1/3 cup vegan maple syrup

Preparation
 



In large bowl mix flour, baking powder and oats.


In a separate bowl combine milk, egg or Ener-G Egg Replacer, peanut
margarine and maple syrup. Add to the dry ingredients; stir just
until moistened.


Spoon into prepared muffin tins. Bake at 400 degrees F for
20 to 25 minutes. Makes 12 muffins.

Lazy Scones
Preheat oven. Sift flour and salt into bowl. Add vegan sugar. Rub margarine in lightly. Make a well in the centre and pour in milk. Work lightly into dough.(Adding a few sultanas if wish.) Knead very lightly on floured bo (Upload by user)

Zuchini Bread
Preheat oven to 350. Stir first five ingredients together. Add dry ingredients and stir well. Pour batter into 8 1/2 by 4 1/2 nonstick baking pan. Bake for 50-60 minutes. (Upload by user)

Fantastic Frittata
Poke holes in potatoes with fork and microwave 6 minutes on high. Saute onion and pepper with oil in skillet, 10 minutes or soft and golden brown. Peel and cube potatoes and add with sausage. Cover, add 1 T. water and cook 5 minutes. Add broccoli, olives, salt, pepper (Upload by user)

OJ Pancakes
Combine all dry ingredients in one large bowl and all wet ingredients (except Ener-G Egg Replacer and water) in one small bowl. Mix together Ener-G Egg Replacer and water separately, and add to "wet" bowl. Mix each combination well. Add wet mix to dry and stir gently (Upload by user)

Oatmeal for One
Bring water to boil. Add dash of salt. Add Oatmeal. Cook and stir for one minute. Not a second longer. Serving with margarine is good. (Upload by user)

Peanut Butter Breakfest Bars
Mix togeather peanut butter, molasses and brown vegan sugar in 4 1/2 qt. pan. Bring to boil under med. heat, stiring often. Remove from heat, add oats mix well. Pour into greased 9x13 pan press into place with waxed paper. Let cool for 15 min. Cut into sq.

Mock Scrambled Eggs
