Zucchini Bread

Ingredients
 

  • 2 cups grated zucchini (about 7 small zucchinis)
  • Ener-G Egg Replacer for 3 eggs
  • 1 cup oil
  • 2 cup vegan sugar
  • 2 teaspoon vanilla extract
  • 3 cups flour
  • 1 teaspoon salt
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 2 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 3/4 cup raisins (optional)

Preparation
 


Preheat oven to 350, oil 2 8.5x4.5 loaf pans


Mix zucchini, Ener-G Egg Replacer, vegan sugar, oil, and vanilla in a
large bowl.


In another bowl, mix flour, salt, baking soda, cinnamon,
nutmeg, and baking powder.


Gradually mix dry ingredients in with zucchini mixture.
Stir well.


Pour batter into 2 pans, bake 40-60min.
