Sweet Potato Pudding

2 Eggs; beaten

3/4 c Sugar; to 1 cup

2 c Sweet potatoes; raw, grated

1 cn Evaporated milk; 13 oz

1/2 c Milk

1/2 ts Cinnamon

1/2 ts Nutmeg

1/2 ts Salt

1/2 c Butter (or marg.); melted

1 c Flaked coconut

Combine eggs and sugar in a large mixing bowl, beating well; stir in remaining ingredients. Pour into a greased 1-1/2 quart casserole. Bake at 350 degrees for 1 hour.
