Honey Glazed Chicken
1/2 cup honey 2 Tablespoons reduced sodium chicken broth 2 Tablespoons mustard 1/2 teaspoon grated lemon peel 2 Tablespoons lemon juice 1/4 teaspoon salt 3 pounds cut-up broiler fryer chicken -- skin removed Heat coals or gas grill. Mix all ingredients except chicken. Cover and grill chicken, bone sides down, 5-6 from medium heat 15-30 minutes. Turn chicken. Cover and grill 20-40 minutes longer, turning and brushing 2 or 3 times with honey mixture, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard any remaining honey mixture. 6 servings. |
