Drunken Chicken
Ingredients | |||
4 | each | chicken breasts, boneless skinless | |
1 | tablespoon | butter | |
1 | tablespoon | olive oil | |
3 | tablespoon | tequila | |
4 | each | garlic, cloves, chopped | |
2 | tablespoon | cilantro, chopped | |
3 | each | scallions, chopped | |
1/4 | cup | heavy cream | |
1/4 | cup | chicken stock | |
1 | tablespoon | dijon mustard | |
1 | tablespoon | worcestershire sauce | |
Directions: | |||
Assemble ingredients. Melt butter in large heavy skillet. Add olive oil and saute breasts until just done, 2-3 minutes each side. Remove to warm plate. deglaze pan with tequila (flaming to remove alcohol). Add garlic, scallions and cilantro and saute briefly, then add broth, cream, mustard and worcestershire. |
