Meatballs

1 1/2 lb Ground beef

1 ea Egg

1/4 c Parmesan cheese

1 T Parsley

1 ea Garlic clove, minced

1 ea Hard roll softened in milk

Salt & pepper

Mix all ingredients thoroughly. Shape into small balls about 2" in diameter and drop into simmering tomato sauce. Cook slowly 20-25 minutes, stir carefully.

Variation: Meatballs may be browned in hot olive oil, then dropped into simmering sauce.

Variation: Place meatballs on an oiled broiler pan, turning carefully as they brown.
