Calabacitas

Ingredients
1tablespoonolive oil
1eachonion, chopped
3eachgarlic, cloves, minced
4eachzucchini, small, diced
1cupcorn, frozen, whole kernel
1eachchile pepper, fresh, poblano, seeded, chopped
15ozblack beans, can, rinsed, drained
1/2teaspoonsalt, or to taste

Directions:

Heat olive oil in a large skillet over medium-high heat. Add onion and garlic, and cook, stirring until translucent. Add zucchini and poblano pepper, and saute until soft. Stir in corn and beans, and heat through. Season with salt to taste.
