Green Bean Jicama Salad

Ingredients
 


DRESSING

1 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp fresh lemon juice
1/2 tsp honey -- or equiv.
1 sweetener
1/2 tsp ground ginger
1/2 tsp dark sesame oil

VEGETABLES

1 lb fresh green beans
1 medium jicama -- peeled and
1 julienned
1 red onion -- thinly sliced

Preparation
  Blanch the green beans, shock them in cold water to halt the cooking
process, chop them into bite-size pieces, and set them aside.

Whisk together dressing ingredients. Add green beans, jicama, and red
onion. Toss well with dressing. Chill at least 1 hour before serving,
tossing again after 1/2 hour (to help the marinating process).

Green Bean Croquettes
Melt margarine in small saucepan; blend in flour. Add milk slowly; cook, stirring constantly, until very thick. Add salt, onion and Worcestershire sauce. Chop or mash beans; add coarse bread crumbs and hot white sauce. Mix well. Chill. Shape mixture into croquettes, using 1 table (Upload by user)
