Tartar Of Smoked Salmon On Rye Barquette

Ingredients
 

1 lb smoked salmon minced by
1 hand
1 tbsp capers
1 juice of 1 lemon only
1 tsp minced onion
1 egg white
1/2 tsp fresh chives finely chopped
30 barquettes-boat shaped
1 pastry

Preparation
 
MIx well minced salmon, capers, lemon juice, onion, egg white and
chives and portion into 30 equal parts. Top barquettes and serve. If
barquettes are not available, use round 1 inch croutons or similar
cracker as base.
