Tofu Salad

Ingredients
 

1 lb firm tofu
1/4 cup tahini
1 tsp mustard
1 tbsp tamari
1 tbsp eggless mayo
1/4 cup onion, finely chopped
1 small garlic clove, minced
1/4 cup shredded carrots
1 tbsp chopped fresh parsley

Preparation
 
Mash tofu. Add other ingredients and mix well. Spread on toast, pita,
crackers, or roll up in lettuce leaves.
