Sicilian Style Turkey Sausage

Ingredients
 

5 feet small hog or sheep casings
5 lb turkey meat-15% fat
2 tsp whole fennel seed
2 tsp crushed fennel seed
2 tsp crushed red pepper-optional
2 tsp salt, or to taste
2 tsp black pepper
1 tsp garlic powder or-
2 cl very finely minced garlic

Preparation
 
Prepare casings.

Using fine disk, grind turkey, mix with remaining ingredients and
grind again.

Stuff into casings and twist off into 3" links.

Cook in vegetable oil until browned and cooked through.
