Mashed Parsnips with Brown Sugar1 pound fresh parsnips, peeled and sliced
Margarine (to taste)
Salt and pepper (to taste)
1/4 cup brown sugar (or 1/4 cup maple syrup or honey)
2 tablespoons finely minced parsley (optional)Steam or boil parsnips in a saucepan in 1/2 cup of slightly salted water until each slice pierces easily. (Microwave in a microwave-safe covered container for 6-8 minutes for better flavor). Drain water. Add all remaining ingredients and stir and blend to desired consistency. Either lumpy or smoothly mashed, fresh parsnips prepared this way are distinctive and incredibly delicious.Serves 4.
