Bobbie s Chili Sauce


12 cup tomatoes -- peeled and
1 chopped
3 cup celery -- chopped
2 cup onion -- chopped
1 cup green pepper -- chopped
1/4 cup salt
2 cup sugar
1/4 cup brown sugar
1 1/2 tsp pepper
1 1/2 tsp mixed pickling spice
1 cup white vinegar

Combine 1st five ingredients and let stand overnight. Drain in
colander but do not press. Place in a large kettle and add remaining
ingredients (pickling spice in cheesecloth). Bring to a boil, reduce
heat and simmer for 15 minutes. Fill jars and process for 10
minutes. Fills 12 - 8oz. jars.
